A thick cutting board 320 × 240 millimetres and 40 millimetres high, made from beech blocks laid end grain up. A board like this is called a butcher’s block: the knife enters the end of the fibre, so the fibres part and close again and the cut mark does not show. Because of that the edge stays sharp longer and the board stays smooth longer.

The chequered pattern on the surface is not decoration but a consequence of how it is made — every block is turned grain upwards and glued to its neighbour. The 40 millimetre thickness gives the weight that keeps the board in place while cutting.

End-grain boards need more care than ordinary ones: oil once a month rather than twice a year. In return they last for years and, when worn, can be sanded back and brought to their original state.

Never soak; wipe with a damp cloth and oil regularly with a wood oil.
