Wooden barrel of 110 litres barrique with a stand is produced of sessile oak. The wooden barrels can have galvanised or black hoops.

The wooden barrel of 110 litres, like all barrique barrels, is known for its ability to improve the quality of wine and rakia (fruit brandy) considerably. Our oak barrique barrel of 110 litres is made using sessile oak.

Production of barrique barrels of 110 litres

The process starts with the selection of sessile oak. The wood first stands in the open air for up to 2 years, which allows it to develop the necessary porosity and to dry naturally, reducing the tannin content that can otherwise dominate the taste of the drink.

Once the wood has dried, our craftsmen work it into staves, which are then bent and shaped into the cylindrical form of the barrique barrel. Each barrel is assembled by hand, with particular attention paid to the toasting of the inside of the barrel, from light to intense, in order to optimise the interaction between the wood and the drink.

Characteristics of barrique barrels

A barrique barrel of sessile oak allows precise control over micro-oxygenation, the process through which the drink gradually breathes. This controlled exposure to oxygen allows the alcohol to develop its aromas slowly, which results in a deeper and richer taste.

A smaller barrel volume, such as our barrel of 110 litres, allows a larger contact surface between the drink and the wood, which increases the transfer of aromatic compounds such as vanillin and tannins.

Preparing the oak barrel

Initial rinsing: pour about 20 litres of water into the barrel and leave it standing upright. After 12 hours turn it onto the other side and leave it upright for at least another 12 hours.

Further rinsing: place the barrel lying on the stand, fill it to the top with cold water and allow the temperature of the water to reach room temperature before letting the water out. Repeat this step until the water runs completely clear.

If you want an even lower level of tannin, repeat the rinsing with cold water several times. It is important to note that a completely new barrel may leak at the beginning, even for the first few days. That is entirely normal, because during filling the staves expand and fit more closely against each other and so seal the barrel.

If you leave the barrel empty, after a few weeks the staves will start to shrink again, and in that case you have to fill the barrel with cold water again so that they expand. When you fill the barrel with water, do not use the bungs.
