Description
A wooden stirring paddle 600 millimetres long and 70 wide. Flat and broad — made for stirring thick mixtures that an ordinary spoon cannot move: ajvar, plum butter and jams that are cooked for hours.
The flat end scrapes along the bottom of the pot, which is what stops a thick mixture from catching and burning. A round spoon slides over the bottom instead of clearing it.
Beech. Wood does not conduct heat, so the handle stays cool through a long cook, and it does not scratch an enamel or copper pot.
Sixty centimetres is the length for a household pot on a stove. For a cauldron over an open fire, the longer sizes in the same series are the right choice.
