Description
A wooden cabbage shredder with a single blade, 350 × 120 millimetres. Used for shredding cabbage for pickling and for any vegetable that has to come out in even sheets — the blade is fixed and the vegetable is drawn across it.
The frame is wood, the blade is set into it at a fixed angle, and the opening below lets the cut vegetable fall straight into the bowl.
Beech, 19 millimetres thick. The frame has to be rigid or the blade shifts under pressure, which is why a shredder is made from a thick panel rather than a thin board.
A shredder gives a thinner and more even cut than a knife, and that evenness is what matters for pickling: slices of different thickness ferment at different rates.
