Description
A round board 350 millimetres across with a shallow recess in the middle and a flat rim around it. The recess holds juices and marks off the main part of the serving, while the rim stays for handling and for what is picked up by hand.
The run from rim to recess is soft, with no lip to hold leftovers. The surface is sanded smooth and left unfinished.
It is made of beech, glued up from several lengthwise staves. Gluing is the condition at this diameter for the board to stay flat and not rock on the table. Beech is dense, does not take on smells and stands daily washing in lukewarm water.
The central recess holds the juice from a roast, so meat can be carved and served on the same piece. If it is used for pizza, note that the rim of the recess sits higher than the middle.
