Description
Eighty centimetres long and 23 millimetres across — the longest thin pin made. It is used where the dough sheet is wider than a normal pin can cross: large pies, whole trays, filo made at home.
The length is the whole reason for it. A sheet rolled in one pass is even; a sheet rolled in two overlapping passes is not, and the joint shows after baking.
Beech, turned from one piece. At 80 centimetres and this diameter the wood has to be straight-grained and dense, or the rod bends under its own working pressure.
Pins this long are kept by households that still make their own pastry and by small bakeries. They are stored lying flat or hanging — never standing in a corner, where a thin rod takes a set.
