Description
A thin rolling pin, 23 millimetres across and 600 long. A rod rather than a roller — the tool used to stretch dough thin, where thickness in the pin itself gets in the way.
The narrow body lets the dough be rolled out from under, as thin pastry and filo require. At 60 centimetres the pin reaches across a wide sheet in one pass.
Beech, turned from one piece. A rod this thin has to be made from dense wood or it bows; beech holds straight along the full length.
This is the pin that is used with the hands rolling the dough around it, not just over it. The thinner the rod, the thinner the sheet that can be worked without tearing.
