Description
A rolling pin 47 millimetres across and 300 long — short, for one pizza base at a time. The length is matched to the work: a long pin is unwieldy over a round base the size of a plate.
Thirty centimetres is enough to cross a standard base in one pass, which is what keeps the thickness even from the middle to the rim.
Beech, turned from solid wood. Pizza dough is wet and sticky, and floured beech releases it better than a smooth or coated surface.
Many pizzerias use the hands rather than a pin for the final shaping, and the pin only for the first spread. A short pin suits that: it sits beside the bench and is picked up for seconds at a time.
