Description
The largest of the series — 415 × 220 millimetres at 19 millimetres thick. Size 6 is for breaking down rather than portioning: a whole piece goes on it and is worked through from one end.
At 22 centimetres wide the board takes a cut laid across it with room on both sides, so the knife hand is never over the edge.
Beech, glued up from several lengthwise staves. At this width gluing is the only construction that holds — a solid panel would cup within months of the washing a butchery board gets.
Butchers who buy the whole series use size 6 as the fixed board on the bench and the smaller ones as the boards that move. The big one is rarely lifted.
