Description
Size 5 of the meat board series: 400 × 200 millimetres, 19 millimetres thick. Forty centimetres long and twenty wide — the board a butcher’s bench is built around.
The proportions are the working ones: long enough for a whole joint, wide enough to turn it on the board without lifting it off. Plain flat surface, no channel.
Beech, glued up from several lengthwise staves. Twenty centimetres is well past the limit for a single piece — a solid panel would warp, split and then rock, which is unsafe on a cutting bench.
Butchery boards are kept dry between uses and oiled from time to time. A board of this thickness, treated that way, outlasts several thinner ones.
