Description
Size 4 measures 355 × 180 millimetres and is 19 millimetres thick. This is the point in the series at which the board stops being a single-portion tool and starts taking whole cuts.
At 18 centimetres wide a joint lies across the board rather than along it, which is how a butcher works when the knife has to go through at an angle.
Beech, glued up from several lengthwise staves. A board this wide cannot be one piece: it would cup, and a cupped butchery board rocks under pressure, which is dangerous with a sharp knife.
The 19-millimetre thickness means the board can be resurfaced — sanded flat after years of use and put back into service rather than replaced.
