Description
Meat board 3 measures 345 × 160 millimetres at 19 millimetres thick — the middle of the series, and the size that suits most everyday butchery work.
Wide enough to take a whole cut flat, long enough to slice along it without the end hanging over the edge. The surface is plain, with no channel to clean out.
Beech, glued up from several lengthwise staves. At 16 centimetres a solid piece would warp — wood moves across the grain, and the wider the board the more it moves. Gluing keeps it flat.
Butchers keep the middle sizes closest to hand, because most of the day’s work is portioning rather than breaking down whole carcasses. Size 3 does both at a push.
