Description
The second size in the meat board series: 310 × 140 millimetres, 19 millimetres thick. A step up from size 1, still small enough to work with one hand on the board.
The thickness is the point of the series. A 19-millimetre panel takes the shock of a knife going through bone without the board jumping on the worktop.
Beech, glued up from several lengthwise staves. Butchery boards are washed hot and often, and that wetting-and-drying cycle is what opens a solid panel. Glued staves hold.
Boards in this line are bought as a set — one size for each station, so nothing is cut on a board that is wrong for it. Size 2 is the one most often kept at the scales.
