Description
Meat board 1, 275 × 120 millimetres — the first and smallest size in the series. The nine boards in this line go up in steps, so a kitchen can pick the one that matches the work rather than making do.
Thickness 19 millimetres, which is what distinguishes a meat board from a light serving board: it does not flex when the knife goes through bone or sinew.
Beech. At 12 centimetres this one sits at the limit where a single piece is still possible, but the board is made the same way as the rest of the line, from glued staves, because that is what keeps it flat through repeated washing.
The small sizes in this series are used for portioning rather than for whole cuts — one steak at a time, or trimming at the bench where a large board would not fit.
