Description
A wooden lard press, 550 × 120 millimetres. It is used for pressing cracklings after rendering — the mass goes between the arms and is squeezed, so the fat runs off and the cracklings come out dry and crisp.
How hard they are pressed decides what they are: lightly pressed cracklings stay soft, fully pressed ones keep for months.
Wood, built as two hinged arms. Wood is used because it absorbs nothing and gives nothing back — the fat being pressed out is the product, and it has to stay clean.
Rendering is autumn work, done once a year in quantity. The press is washed in hot water the same day and dried completely before it is put away until the next season.
