Description
A board of 345 × 270 millimetres, named for the dish it is meant for — roast lamb, carved and served on the wood rather than transferred to a platter.
The proportions are close to square, which suits a carved joint laid out in pieces rather than a long cut sliced in a row. Flat surface, 19 millimetres thick.
Beech, glued up from several lengthwise staves. At 27 centimetres wide a solid panel would warp, and a roast coming off the spit puts heat into the board immediately. Gluing is what keeps it flat.
Lamb is carved at the table in many places, which is why a board and not a plate is used: the board takes the weight, the knife and the heat without sliding or cracking.
