Description
A kneading board 600 × 800 millimetres — the large format, for rolling out whole sheets of dough. This is the board pies, strudel and filo are made on, where the dough has to be stretched thin across a wide surface.
Eighty centimetres by sixty gives room for a full sheet with margin on all sides, so the dough is never worked right at the edge of the board.
Beech, glued up from several lengthwise staves. A panel of this size is impossible as a single piece — it would cup badly and then rock on the table under the rolling pin, which ruins even rolling.
Boards this large are not stored in a drawer. They stay on a table or are hung on a wall, and in many households the same board serves for decades because beech takes the flour-and-scrape routine without wearing through.
