Description
A kneading board 500 × 700 millimetres. The larger format — for households that knead in quantity and for bakery use, where more dough is worked at once.
Half a metre by seventy centimetres gives room to roll a full sheet without working at the edge of the board, which is where dough tears.
Beech, glued up from several lengthwise staves. A panel this size is impossible as a single piece — it would cup and then rock under the rolling pin, which makes even rolling impossible.
Scrape the board clean with a blade rather than washing it every time. Water is what wears a kneading board; flour and a scraper are what keep it working.
