A kneading board 300 × 500 millimetres — the surface dough is worked on. Flour goes on it, the dough is turned and pressed, and the board is scraped clean afterwards.

Half a metre long and 30 wide, which is enough for the amount of dough one person kneads at a time. The surface is plain, with no channel or raised edge to get in the way of the hands.

Beech, glued up from several lengthwise staves. Dough work means water and flour on the wood every time, and that wetting cycle is what opens a solid panel. Glued staves hold the board flat.

Wood is used for kneading rather than stone or steel because it is slightly warm to the touch and does not draw heat out of the dough, which matters when yeast is working.
