Description
A flat wooden spatula, 300 × 50 millimetres and only 5 thick. Flat rather than hollowed — this is a tool for turning and lifting, not for stirring.
The thin edge goes under what is being cooked without breaking it, which is what a hollowed spoon cannot do. Pancakes, fish, anything that has to stay whole.
Beech. At 5 millimetres the wood has to be dense or the edge would chip; beech holds a thin edge without splintering.
A flat spatula is also the tool for scraping a pan clean while it is still hot, because the whole edge meets the surface at once.
Keep a flat spatula and a hollowed spoon side by side rather than choosing between them. One turns and lifts, the other stirs and ladles, and neither does the other job well.
