Description
The Eco mallet has a square head of 45 × 45 millimetres and a total length of 275. A flat-faced mallet, for pressing meat out evenly rather than pounding it.
The square face covers more of the cut in one stroke than a round head, which is why it is preferred where the meat has to end up a uniform thickness — breaded cutlets, rolled dishes.
Beech, turned and shaped from solid wood with no fitted joints. There is nothing to work loose in a tool that takes repeated impact.
The flat face also makes the mallet useful for pressing dough and for crushing — a job a round head does badly, because it rolls.
