Description
A wooden crêpe spreader, 180 millimetres long and 16 across. It spreads the batter over a hot plate — a circular sweep takes the batter out into a thin, even layer.
The thickness of a crêpe is decided in that one movement. Tilting the pan gives an uneven result; a spreader gives the same thickness every time.
Beech, turned from one piece. Wood does not scratch the plate and does not heat in the hand, which matters on a tool held over a hot surface for minutes at a time.
This is the tool crêperies use rather than a pan that is tilted. It is why the crêpes come out the same size and thickness one after another.
