Description
A narrow cheese board 450 × 140 millimetres. The format is deliberately elongated — the cheeses are laid in a row, from mildest to strongest, the way they are tasted, and the board does not take the centre of the table.
A width of 14 centimetres is enough for a piece of cheese with the knife beside it, and a length of 45 for five or six kinds. The surface is flat and without dividers, so the arrangement stays free.
The panel is beech, glued up from several lengthwise staves, 19 millimetres thick. Beech does not take on smells, which is decisive with cheese — a strong one leaves no trace for the next serving.
Take the cheeses out at least half an hour before serving so they come to room temperature; a wooden base does not chill them the way stone or ceramic does.
