Description
A board of 350 × 255 millimetres with a stone set into it. The stone is heated and the food is cooked or kept hot on it at the table — the guest finishes the dish themselves.
The wood around the stone stays cool enough to handle, so the board is carried while the stone is hot. The stone recess holds it steady and keeps the heat off the table.
The board is beech, glued up from several lengthwise staves, 19 millimetres thick. Heat from the stone is exactly what warps a solid panel, so the glued construction is not optional here.
Hot-stone serving is used for steak and for seafood. The stone comes out of the oven at temperature and keeps cooking for several minutes, which is what lets each guest decide how far their piece is done.
