Ash cubes for wine and rakia, medium toasted, are an excellent solution for ageing wine and rakia (fruit brandy).

The recommended dosage is 2-4 g/l of drink.

Recommended contact time: 1-4 months.

The recommended dosage will make some spirits and wines only slightly oaked, others slightly stronger, while the exact dosage depends mostly on the taste and the desired goal of the producer.

Way of use

The chips and/or cubes should be immersed in the drink in a suitable clean mesh that will not introduce foreign smells or tastes, and weighed down with a clean object of ceramic, stainless steel or other suitable material so that it sinks. The net should be pulled up and down occasionally to increase the extraction and distribute it more evenly. It is important that the chips and/or cubes stay submerged.

An alternative is to carry out the extraction on a smaller amount of drink (for example 1 kg of chips or cubes in 5 or 10 litres) and later dose the extract into the rest of the batch as desired. In this way the concentration can be controlled precisely.

The chips and cubes offered by Kolibica are made from selected Serbian ash, dried in the open air for up to 24 months. Warm air, not an open flame, is used to toast them at a temperature of 180 to 245 °C.
