Description
A wooden stirring paddle 700 millimetres long and 80 wide — longer and broader than the basic size. For a cauldron and for large pots, where a year’s worth of preserves is cooked at once.
The broader end moves more of the mass with each turn, so stirring takes less effort over a cook that lasts hours.
Beech, cut and shaped from solid wood. The length means the hand stays well clear of the heat rising off an open pot.
Preserve-making is communal work in many places, and the paddle is passed from one person to the next through the day. That is why it is made long enough for anyone to take over without moving the pot.
