Description
A set of three sieves with wooden rims, 210, 230 and 245 millimetres across and 100 tall. Three mesh grades cover the whole job — from coarse sifting down to fine flour for cakes.
The rim is wood, which is what keeps a sieve round and the mesh tensioned. A deformed rim slackens the mesh and the sieve stops working properly.
The three diameters nest, so the set stores as one piece in the space of the largest sieve.
Sifting is not only about removing lumps — it aerates the flour, and aerated flour takes up liquid differently. That is why bakers sift even clean flour.
