Description
A wooden pestle 330 millimetres long and 47 across. It is used with a mortar — for crushing garlic, spices and nuts, and for anything that has to be broken down rather than cut.
The rounded end follows the bottom of the mortar, so the mass gathers in the middle instead of escaping up the sides.
The length of the handle gives swing and keeps the hand above the bowl. Turned from a single piece of beech — dense and heavy, which is where the weight needed for crushing comes from.
A light pestle does not work: the mass has to come from the tool, not from the arm. That is why beech is used rather than a softer wood.
