Description
An oval platter 460 × 280 millimetres, divided by one line into two fields. The simplest division in the range: one field for the main course, the other for a side, with no further splitting that would limit the arrangement.
The line is cut into the panel itself, shallow enough not to get in the way when food is taken and marked enough to keep juices apart. The surface is sanded smooth and flat.
A division into two fields is the most common choice in hospitality, because it does not tie the cook’s hands — one platter serves both a course with a side and two separate starters.
Wash by hand and wipe dry straight after.
