Description
Mortar M, 70 millimetres across and 100 tall, with its pestle. The smallest of the three sizes — for a clove of garlic, a pinch of peppercorns or a spoonful of salt, ground as needed rather than in advance.
The bowl is deep in proportion to its width, which keeps what is being crushed inside instead of jumping out. The pestle is turned to fit the curve of the bowl.
Beech, turned from solid wood. Wood does not bruise herbs the way metal does, and it does not take on the smell of garlic as plastic will.
A small mortar stays out on the worktop rather than in a drawer, because the point of it is to grind the amount you need at the moment you need it.
