Description
The Gico board, 400 × 230 millimetres — a plain rectangular serving board in the format restaurants order by the dozen. Long enough for a mixed grill, narrow enough to set in front of one guest.
The surface is flat with no channel, which keeps it quick to clean between services. Both faces are usable, so a board can be turned rather than taken out of rotation.
Beech, glued up from several lengthwise staves, 19 millimetres thick. At 23 centimetres a solid panel would warp under the heat of a hot dish; glued staves hold the surface flat.
Grill restaurants serve on wood because the board keeps the meat hot longer than a plate and does not cool it from underneath. That is the reason this format exists at all.
