Description
A board cut in the shape of a fish, 480 × 200 millimetres, with an opening at the tail that serves as a handle and as a place to hang it. The shape was chosen for its use — most often for fish, for seafood, and in restaurants that care how a dish is presented.
At 48 centimetres long it takes a whole medium fish. The outline is cut so the fins and tail stay readable, while the working surface stays flat and usable.
The panel is beech, glued up from several lengthwise staves, 19 millimetres thick. Beech does not take on smells — which matters above all with fish — so after washing no trace of the previous dish is left.
Fish leaves a smell that lingers longer than other foods, so wash this board straight after use, while the surface is still damp. Rubbing it with lemon helps to neutralise the smell.
