Description
A raised round board of 40 centimetres — the largest of the three with a stand. It takes a full platter and lifts it above everything else on the table, which is how a main dish is set apart from the sides.
The board is separate from the stand, so it serves twice: raised for presentation, flat for cutting. The stand carries the weight at the centre.
Beech, glued up from several lengthwise staves. At 40 centimetres a solid panel would warp, and on a central stand a warped board rocks. Gluing is what keeps it level.
In catering this is the board that holds the centrepiece. Everything else goes on flat boards around it, and the height does the work of telling guests where to start.
