Description
A board cut to the outline of a ham — wide at one end, narrowing to a handle at the other. The shape says what it is for before anything is put on it, which is why delicatessens and butchers use it.
The narrow end serves as a handle, so the board is carried to the table with one hand. The wide end takes the slices.
Beech, glued up from several lengthwise staves. Beech is hard and dense, so the knife does not dig into the surface when cured meat is sliced thin.
The outline is as useful as it is decorative: the narrowing end leaves a free corner on the table, so a knife or a small bowl of olives sits beside the slices without crowding them.
