Ovaj proces zahteva pa\u017eljivo vo\u0111enje i kontrolu kako bi se postigao \u017eeljeni kvalitet viskija. U nastavku \u0107emo detaljno istra\u017eiti svaki segment fermentacije, isti\u010du\u0107i klju\u010dne faktore i procese.<\/p>\n<h3>1. Priprema sladovine i dodavanje kvasca<\/h3>\n<p>Prvi korak u fermentaciji viskija je priprema sladovine, koja se dobija iz ohla\u0111ene ka\u0161e nakon procesa pranja. Sladovina se prenosi u posudu za fermentaciju, gde se dodaje odgovaraju\u0107i soj kvasca. Tipi\u010dno se koristi <strong>Saccharomyces cerevisiae<\/strong>, kvasac koji je prilago\u0111en za fermentaciju \u0161e\u0107era u alkohol i \u010desto se koristi u proizvodnji piva i vina.<\/p>\n<h3>2. Proces fermentacije<\/h3>\n<p>Tokom fermentacije, c\u0301elije kvasca metabolizuju \u0161e\u0107ere u sladovini i proizvode alkohol, ugljen-dioksid i druge nusproizvode. Sadr\u017eaj alkohola u sladovini se postepeno pove\u0107ava kako se vi\u0161e \u0161e\u0107era pretvara u alkohol. Pa\u017eljiva kontrola temperature omogu\u0107ava optimalne uslove za aktivnost kvasca i osigurava da se postigne \u017eeljeni profil ukusa i arome.<\/p>\n<h3>4. Naj\u010de\u0161\u0107e kori\u0161tene posude za fermentaciju viskija su fermentacione ba\u010dve ili tankovi od ner\u0111aju\u0107eg \u010delika. Evo detaljnijeg obja\u0161njenja oba tipa posuda:<\/p>\n<ol>\n<li><strong>Fermentacione ba\u010dve<\/strong>: Tradicionalno, viski se fermenti\u0161e u velikim <strong><a title=\"Drvene ba\u010dve\" href=\"https:\/\/www.kolibica.com\/it\/kategorija-proizvoda\/botti-di-legno\/\">drvenim ba\u010dvama<\/a><\/strong>. Hrastovina posebno ima sposobnost da prenese suptilne note drveta, za\u010dina i vanile u fermentisanu smesu, \u0161to doprinosi bogatstvu ukusa finalnog proizvoda. <strong><a title=\"Fermentacione ba\u010dve\" href=\"https:\/\/www.kolibica.com\/it\/kategorija-proizvoda\/botti-di-legno\/\">Fermentacione ba\u010dve<\/a><\/strong> tako\u0111e omogu\u0107avaju ne\u0161to propustljiviju povr\u0161inu u pore\u0111enju sa tankovima od ner\u0111aju\u0107eg \u010delika, \u0161to mo\u017ee doprineti specifi\u010dnom mikrobiolo\u0161kom okru\u017eenju i kompleksnosti fermentacije. Me\u0111utim, va\u017eno je napomenuti da se u modernoj proizvodnji viskija sve vi\u0161e koriste i fermentacioni tankovi od ner\u0111aju\u0107eg \u010delika zbog prakti\u010dnosti i lak\u0161e kontrole procesa.<\/li>\n<li><strong>Tankovi od ner\u0111aju\u0107eg \u010delika<\/strong>: U modernoj industrijskoj proizvodnji viskija, sve \u010de\u0161\u0107e se koriste fermentacioni tankovi od ner\u0111aju\u0107eg \u010delika. Ovi tankovi pru\u017eaju visok nivo kontrole nad procesom fermentacije jer omogu\u0107avaju precizno regulisanje temperature, pH vrednosti i drugih parametara.
